Chyclothermic oven
- By a cyclothermal oven, the air heated by a gas or oil burner under the action of the fan passes through the channels directly below the baking surface. Part of the air comes out through the chimney, and the part recirculates with the addition of fresh air. This air is “technical” and is not in contact with the products. The baking surface is located directly above the air ducts and thus heated.
