Expert seminar “Discovering Portuguese panaderías and pastelarías”
The established rhythm of two professional seminars per year, organized by the Richemont Club Croatia with strong support of TIM ZIP, continued on the penultimate day of February this year. In the promotional bakery of TIM ZIP an educational and interactive workshop was organised.
The secrets of the Portuguese craft were brought by Elisabete Ferreira, president of the Richemont Club Portugal and proud representative of the third generation of bakers in her family, alongside Aníbal Morais, a master of the profession and founder of the Portuguese club. Trough live production of bakery and pastry products, they evoked the eating habits of the Portuguese population and presented the unique tradition and gastronomic authenticity of their country.
With excellent consecutive translation, the seminar was attended by 40 participants from 17 companies from Croatia and Serbia.
Listening to lecturers and being able to participate in the production part themselves, the attendees got familiar with the peculiarities, recipes and technological process of seven traditional Portuguese products made on the basis of rye or wheat sourdough – rye bread, Black Rose bread with carob flour, boiled rye grains and water with an infusion of pine (the fruit of a mountain bush), corn bread, corn bread with sardines and filling of tomatoes, onions and peppers, Covilhete, a type of meat pie made of puff pastry and a filling of veal, then the famous Pastel de Nata and the Portuguese version of a croissant.
In the theoretical part of the seminar, the participants listened to a lecture on “Tradition and trends of corn bread in Europe” prepared by prof. Ph.D. Dubravka Novotni and prof. Ph.D. Nikolina Čukelj Mustač from the Faculty of Food Technology and Biotechnology, University of Zagreb.
