Exactly five years after the last gathering in Belgrade, the Open Door Day of TIM ZIP took place on May 16, in the hangar venue Stage 1 at Belgrade Port, and on 2.000 square meters undeniably confirmed its commitment to innovation and quality showcased through entire spectrum of creations, trends, automated machines and lines, technologies, and know-how solutions. Seventeen renowned European manufacturers presented their state-of-the-art equipment for bakery and pastry: AGRIFLEX, BAKON, BTF, DIOSNA, ELIN, FINES, FORTUNA, INSANE SOLUTIONS, JAC, LP GROUP, MILLENNIUM ENGINEERING, PFM, POLIN, RONDO, TRIMA, TURRI, and WIESHEU.

Live presentations presented the operation of lines for burek and rolled pies, production lines for puff pastry products, lines for products made of soft doughs with high percentage of water such as baguettes and ciabatta, as well as the process of producing double rolled buns. Demonstrations also included advanced technologies for biscuit production, slicing of round and square cakes, and the product packaging process.

Certainly, the most anticipated moment of the fair was the premiere of HERKULES, the world’s first automatic line for folding burek and rolled pies. The only operation in the production of these products that could not be performed mechanically until now has been successfully resolved, setting new standards in the industry and opening new perspectives for bakery entrepreneurs.

In addition to the technological innovations, the live performance of Richemont’s artists on eight work tables in the centrally placed bakery attracted the most attention. Representatives from Belgium, Croatia, Italy, Luxembourg, Serbia, and Spain presented the rich European heritage and traditions of their countries, blending authentic tradition with modern flair.

The Croatian club was represented by Bread Club, Noel Bread & Deli, Ekos Cakes, and Pekarnica Zemljič, while the Serbian club was represented by Pekara Centar, Pekara Denis, Pekara Vika, and Skroz Dobra Pekara.

The comprehensive exhibition was attended by more than 400 visitors, including owners, directors, production managers, technologists, bakers, and pasty masters from around 200 companies and crafts. In addition to those from Serbia, this number included business partners from Bosnia and Herzegovina, Croatia, Macedonia, Montenegro and Slovenia.

The fair in Belgrade highlighted the dynamism and challenges of the modern market, which craves for an innovative spirit and quick reactions to consumer demands. One of the main prerequisites for timely information and correct decisions is certainly exchange of new insights among professionals, and this experience confirmed that the Open Door Day of TIM ZIP is definitely among the indispensable platforms for bakery and pastry networking in the region.
