- By steam tube ovens, around and between the decks, there are closed steel tubes partially filled with water, which under the influence of heat is transformed into steam and based on the physical laws it circulates by changing the aggregate state from the water to the steam and vice versa. Steel tubes are installed all over the oven’s depth, more densely at the door and directly heated by the action of a gas or oil burner. The baking surface is located directly above the water pipes and thus heated.
